chimichurri sauce //vegan
Native to Argentina, chimichurri is a flavorful sauce made of flat-leaf parsley, chili, olive oil, garlic, and vinegar. Traditionally it is eaten with grilled meat, but you can also serve it with vegetables or grilled fish.
2 large handfuls of flat-leaf parsley leaves
1/2 fresh green chilli or more to taste
2-3 garlic cloves, chopped
1 small onion or spring onion, chopped
1/2 teaspoon dried thyme
1 tablespoon apple cider vinegar
3 tablespoons extra virgin olive oil
salt + freshly ground black pepper
Place all the ingredients, except for salt and pepper, together in a food processor and blend until you get a chunky paste. Alternatively you can finely chop the ingredients with a knife and whisk them together in a small bowl. Season to taste with salt and pepper.
